Quiche Lorraine with green banana flour

Beforehand, your oven must be heated in Therm. 6 (180 ? C) for 30 minutes of cooking Recipe for 8 people


For the guiche:

  • 200 g green banana flour
  • 75g butter cut in small cubes
  • 50 cl of water
  • 1/2 teaspoon of Xanthan gum or psyllium
  • a pinch of salt

For garnish :

  • 4 eggs
  • 200 g bacon cut into thin slices
  • 1 chopped onion in thin slices
  • 1 pinch of salt and pepper
  • Some small tapered thyme branches
  • Grated cheese
  • 20 cl of cream
  • 20 cl of liquid cream or milk


  • 1 pie dish that will be buttered
  • Traditional oven

  • A large salad bowl or the bowl of the robot

Preparation of the dough of the guiche

  • In a large bowl or in the bowl of the robot, put green banana flour, xanthan gum or psyllium. Mix dynamically.
  • Cut the butter into small cubes and add them to the previous mixture while working the flours and butter with the fingertips. If you use the robot’s bowl, put the butter directly into the bowl with the flour.
  • Add salt and continue to mix well. Then pour the water to arrive at a homogeneous paste.
  • Make a ball with this paste and wrap it in a food film. Let this dough rest for 2 hours in the fridge.
  • After resting for 2 hours, remove the film and place the dough on the lightly floured work surface (with little rice flour) and roll out the dough. If the dough has a tendency to stick, flour slightly.
  • Place the dough with the roll in the pie plate and prick the dough with the teeth of a fork. Book.

Preparation of the filling

  • In a bowl put bacon, onion, add bacon and onion, cr?me fra?che, liquid cream or milk, thyme, grated cheese, pepper and salt and adjust if necessary. Whisk everything dynamically and fill the bottom of the guiche.

  • 50 g green banana flour
  • 1 egg
  • parsley: 3 thinly cut branches
  • 1 finely chopped onion
  • 1 or 2 small bird peppers according to your taste
  • 3 tails of green onions, finely chopped
  • 30 cl of milk
  • 1/2 teaspoon of turmeric
  • a pinch of salt and pepper
  • dried cod that has been previously desalted and crumbled
  • 1 packet of baking soda or baking powder


  • 1 skillet that does not stick or a small saucepan
  • Absorbent paper
  • Clingfilm
  • A large salad bowl or the bowl of the robot


  • In a large salad bowl or in the bowl of the robot, put the green banana flour, with the milk.
  • Then add the egg, onion, parsley, thyme, green onion, turmeric, salt and pepper and yeast.
  • Mix everything well and then add the crumbled cod, chilli and beat dynamically all.
  • Cover with a dietary fiber and let stand in the fridge for 2 hours.
  • After this break time, beat again just for 1 minute.
  • Heat your stove, add the oil. When the oil is hot, take with a small soup this mixture and place in oil to make small cod donuts. Serve hot.
