Description

Yam is a root vegetable in the form of tubers, the yam does not have a special soil of origin, it is found in the West Indies, Africa, Oceania and India.
The chemical composition of the tubers is close to that of the potatoes with about 25% starch, but a little more protein (about 7%, four times more than cassava). They are very low in fat and minerals, and quite rich in Vitamin C. The antioxidants contained in yam provide health benefits.In particular on the regulation of blood pressure, diabetes and beneficial effects on kidneys and liver.

Donuts with yam flour and plantain with onion and parsley

Ingredients:

  • 150g of yam flour
  • 150g of plantain flour
  • 1 pinch of bicarbonate
  • 1 egg
  • 30 cl of water
  • Onions in big slices
  • Parsley finely chopped
  • Green onions or finely chopped chives
  • A pinch of salt and a chili if needed
  • Oil to fry donuts

Material:

  • 1 saucepan filled with oil to fry the donuts
  • A big salad bowl

Preparation

  • In a large salad bowl mix the yam and plantain and bicarbonate flour.
  • Make a well with these two flours and gradually pour the milk. Mix well to?obtain a creamy paste.
  • Then add to this preparation, the egg, water, parsley, chilli, chopped onions and large slices of onions and continue mixing until a smooth paste is obtained, salt.
  • Preheat your pan and add a good amount of oil so that the donuts?can cook thoroughly.
  • Fry your donuts on each side to make them brown well. Serve hot.

Vegetarian patties with Yam flour and pepper and cheese

Ingredients:

  • 200g of yam flour
  • 1 egg
  • 30 cl of milk
  • Grated cheese
  • Bell pepper, finely chopped or in small pieces
  • Green onions or finely chopped chives
  • a pinch of salt
  • Oil to fry the patties but not in large quantities.

Material:

  • 1 stove
  • A big salad bowl

Preparation

  • In a large salad bowl pour the yam flour then pour the milk. Mix well to?obtain a creamy paste.
  • Then add to this preparation, the egg, milk, chopped onions and pepper and?than cheese.
  • Mix vigorously until a smooth but strong paste is obtained. Salt.
  • Preheat your stove and add the oil.
  • Saut? your pancakes on each side to make them brown well. Serve hot.
