Cassava is a tuber originating from Central and South America. is a root vegetable in the form of tubers. Rich in carbohydrates, potassium, magnesium and Vitamin C, Cassava facilitates digestion and is gluten-free. It also helps to regulate the problems of diarrhea or irritation of the colon. The antioxidant activity will be provided by the vitamin C contained in cassava, the latter vitamin thus allows a good absorption of non-heme iron.

Vanilla Cassava Pancakes


  • 150g of cassava flour
  • 150 cl of cold milk
  • 20 g of butter that will be melted
  • 1 teaspoon yeast pastry
  • 20 g sugar or 2 tablespoons honey
  • 1 egg
  • 1 vanilla pod or 1/2 teaspoon vanilla powder


  • 1 frying pan or skillet that does not stick
  • A large salad bowl or the bowl of the robot
  • Absorbent paper
  • Oil to make pancakes come back


  • Put in the bowl of the robot or in the salad bowl, cassava flour, sugar, yeast, vanilla powder or with a small knife, cut the vanilla in half and remove the small black pulp to inside the pod.
  • In another bowl, combine the milk, melted butter and egg.
  • Slowly mix the preparation of the first bowl in the second while stirring gradually to obtain a creamy paste and let stand about 1/2 hour.
  • In the previously heated skillet, add the oil and add the creamy dough with a ladle in the form of small circles to obtain medium pancakes. Let cook and brown for 1 minute on each side (the fire should not be too strong or too weak). Once the pancakes are golden brown, remove them and put them on paper to absorb the excess oil. Serve hot or cold pancakes.

Cassava and almond cookies

Beforehand, your oven must be heated in Therm. 6 (180 ? C) for 15 minutes of cooking – Recipe for 6 people


  • 250g of cassava flour
  • 170 g brown sugar
  • 30 g of chocolate that has been crushed to obtain nuggets
  • 30 g almonds that have been crushed to obtain fragments
  • 120 g of butter
  • 1 egg
  • 1 vanilla pod or 1/2 teaspoon vanilla powder
  • 1/2 teaspoon of bicarbonate


  • 1 baking sheet and baking paper
  • Traditional oven
  • A large salad bowl or the bowl of the robot


  • In a large bowl or in the bowl of the robot, put the butter and add the sugar, mix well, add the vanilla.
  • Gradually stir in cassava flour and baking soda while continuing mixing.
  • Then add the egg to the mixture until a homogeneous paste is obtained.
  • Add to this creamy mixture, chocolate chips and crushed almonds.
  • Make cookies in the form of flat slabs and place them gently on a baking tray.
  • Bake for 15 minutes, let cool and serve.
