Rice flour buns

Beforehand, your oven must be heated in Therm. 6 (180 ? C) for 20 minutes of cooking

Ingredients:

  • 175 g of rice flour
  • 135 g of cornstarch
  • 25 c lukewarm water (the water must be 40 ? If the water is too hot, the leaven will be destroyed, or the water is below 40 ?, the leaven will have difficulty lifting)
  • 13 cl of milk
  • 1 teaspoon fine salt
  • 2 eggs
  • 8 g baker’s yeast
  • 4 tablespoons of olive oil or rice oil
  • 2 teaspoons of Xanthan Gum or Psyllium

Material:

  • 1 baking sheet and baking paper
  • Traditional oven
  • A large salad bowl or the bowl of the robot
  • Clingfilm
  • Small loaf circles (10 to 12 cm in diameter)
  • 2 more bowls
  • A spatula to handle the dough

Preparation

  • Beforehand, preheat the oven to therm.6 for 10 minutes, then turn off the oven. Oil the circles with buns and put them on the baking sheet that will be covered with a sheet of baking paper and lightly flour the paper inside the loaf rings (10 to 12 cm in diameter).
  • In a large bowl or in the bowl of the robot, put the rice flour and cornstarch, xanthan gum and set aside.
  • In another bowl, put the eggs and olive oil or rice oil and set aside.
  • In a saucepan, heat the water and the milk to 40 ?. In another bowl, pour 5 cl of this mixture of water and milk at 40 ? and add the baker’s yeast, the sugar for 5 minutes so that the baker’s yeast can follow its fermentation process.
  • After these 5 minutes, add to this mixture another 5 cl of liquid (water + milk) and mix slightly. Then pour this mixture into the rice flour, corn starch and xanthan gum and continue mixing.
  • Gradually stir in the large bowl the eggs and oil that have been reserved and continue to mix. The final dough is very consistent.
  • Lay a food film on the large salad bowl and let the dough rise for 2 hours in the oven that has been turned off or in a warm place away from drafts. The dough will be doubled in volume.
  • Once the dough is lifted, remove the food film and lower the dough by turning it on itself with a spatula. Then arrange the dough in each roll ring while smoothing the top to obtain a smooth top.
  • Turn on the oven 180 ? (therm.6) and bake the rolls for 20 minutes and then cool. These rolls can serve you for your sandwiches.

Apple pie with rice flour

Ingredients:

  • 120 g of rice flour
  • 30 g of almond powder
  • 1 teaspoon of brown sugar
  • 2 pinches of salt
  • 120 g of cold butter
  • 1 egg
  • 2 teaspoons of cold water
  • 1/2 teaspoon of Xanthan gum or psyllium
  • 4 apples to peel and cut into thin slices
  • 1/2 tin of applesauce
  • 1/2 teaspoon of cinnamon and vanilla
  • 1 small amount of strawberry jelly or currant

Material:

  • 1 pie dish
  • Traditional oven
  • a rolling pin
  • a spatula
  • A hob and baking paper
  • Clingfilm
  • A large salad bowl or the bowl of the robot

Preparation

Preparation of the sweet pie dough

  • In a large bowl or in the bowl of the robot, put the rice flour, almond powder, xanthan gum or psyllium, salt and sugar. Mix dynamically.
  • Cut the butter into small cubes and incorporate in the previous mixture while working the flours and butter with the fingertips. If you use the robot bowl, put the butter directly into the bowl with the flours.
  • Add the egg and continue to mix well. Then pour the iced water in order to obtain a homogeneous and supple paste.
  • Make a ball with this paste and wrap it in a food film. Let this dough rest for 2 hours in the fridge.
  • After resting for 2 hours, remove the film and place the dough on the lightly floured work surface (with little rice flour) and roll out the dough. If the dough has a tendency to stick, flour slightly.
  • Place the dough with the roll in the pie plate and prick the pastry with the tines of a fork. Book.

Preparation of the filling, ie apples cut into thin slices

  • Apart, cut the apples into thin slices and set aside.
  • In a bowl, put the apple sauce and add the cinnamon and vanilla. Divide the applesauce into the pastry base.
