Originally from Mexico and Central America, Chayote (or darling or Christophine) is ideal if you want to lose weight because it contains a lot of water. B?chamel sauce with christophine and onions for your gratins


  • 50 g of Christophine flour or Chayotte
  • 125g of butter
  • 15g of butter
  • 20 g cornflour
  • 60 cl of milk

  • Salt, pepper, nutmeg

  • Prepare the onion and cut into thin slices, garlic.

  • Add gradually with a wooden spoon, the flour of christophine while stirring constantly. The flour will thicken.

Yogurt and Christophine cake

Beforehand, your oven must be heated in Therm. 5 (160 ? C) for 1 hour of cooking


  • 250 g of Christophine flour or Chayote
  • 125g of butter
  • 170g of brown sugar
  • 1 natural yoghurt
  • 2 eggs
  • 1 packet of baking yeast
  • 1 tablespoon of vanilla powder
  • 1 tablespoon cinnamon powder
  • 1 tablespoon rum or cognac

  • In a large bowl or in the bowl of the food processor, beat the brown sugar and butter, eggs and yeast, and vanilla and cinnamon.
  • Gradually add the Christophine flour.
  • Then add in the mixture the nuts, yogurt and rum or cognac.
  • Pour into the mold all the mixture.
  • Bake for 1 hour therm. (160 ? C).
